ABOUT CHEF CLAUDIA

Claudia has been cooking and involved in food preparation since she was a young girl. Born and raised in Mexico City, she is the eighth daughter in a large Mexican family. A big family guarantees lots of cooking and in a variety of ways. At age 6, her first teacher was her nanny Amalia who taught her how to make tortillas.

She started formal cooking classes when she was 14. She has prepared Italian, Japanese and, of course, Mexican Regional Cooking throughout her life. To round out her formal culinary education, she graduated from The Culinary Institute of America (CIA) at The Anahuac University in Mexico.

In the CIA Continuing Education Program in Hyde Park, NY, she obtained a Diploma in Desserts, Catering, Bakery, and Mediterranean Cuisine.

Chef Claudia specializes in Mexican cuisine, Mexican contemporary cooking, central, north and southeast Mexican cooking.

Professionally she has written food articles for several Food and Lifestyle magazines. She was the Executive Chef for the Universidad Anahuac del Sur in Mexico City as well as owing and operating a catering business in Mexico City. She has lived in Cancun since 2005 where she has been involved in many aspects of of Mexican culinary arts. She has taught cooking classes for more than 15 years and continues to expand her teaching with "Can Cook In Cancun" cooking school. She studied foreign languages at the university Motolinia in Mexico city.

Claudia was recently invited twice by the Mexican Ambassador to Algeria to represent Mexico at the Gastronomic and Cultural week showcasing Mexican cuisine at the Sofitel Algiers Hamma Garden Hotel in North East Africa. Claudia spent five days preparing a variety of Mexican delicacies for Algerian dignitaries and their guests.
